In order to optimize the quality of each harvest, the vines are subject to constant observation: yields are limited to ensure high quality fruit and the maturity of each plot is evaluated to identify the optimal time for harvest. After sorting the grapes, they are pressed slowly to extract only the best fruit. The wine
